Ingredients

2 cups heavy cream

1 cup whole milk

3/4 cup honey

2 tablespoons dried culinary lavender

5 large egg yolks

1 teaspoon vanilla extract

Pinch of salt

Extra lavender buds for garnish (optional)

Instructions

Infuse the Cream: In a medium saucepan, combine the heavy cream, whole milk, honey, and dried lavender. Heat the mixture over medium-low, stirring gently until the honey has completely dissolved and the mixture is steaming but not boiling. Once heated, remove the saucepan from the heat and let the lavender infuse for about 30 minutes.

Prepare the Egg Mixture: Meanwhile, in a separate mixing bowl, whisk together the egg yolks and a pinch of salt until the yolks turn pale and slightly thickened. This will help create a rich and creamy texture in the ice cream.

Temper the Yolks: Strain the lavender-infused cream through a fine mesh sieve into a bowl or measuring cup to remove the lavender buds. Gradually whisk about half of the warm cream mixture into the egg yolks to temper them—this prevents the yolks from scrambling. Once well combined, slowly pour the egg mixture back into the saucepan with the remaining cream.

Cook the Custard: Place the saucepan over low heat. Continuously stir the mixture with a wooden spoon or spatula, cooking until it thickens enough to coat the back of the spoon. This process should take about 8-10 minutes. If using a food thermometer, aim for a temperature around 170°F (77°C).

Chill the Mixture: After achieving the desired thickness, remove the pan from the heat and stir in the vanilla extract. Transfer the custard to a clean bowl and let it cool at room temperature for about 30 minutes. Once cooled, cover the bowl and refrigerate the custard until it's thoroughly chilled, preferably for 4 hours or overnight.

Churn the Ice Cream: Once your mixture is completely chilled, pour it into your ice cream maker. Churn according to the manufacturer’s instructions until the ice cream reaches a soft-serve consistency.

Freeze: Transfer the churned ice cream to an airtight container. Freeze it for at least 4 hours or until it's firm enough for scooping.

Serve: When ready to enjoy, scoop the silky lavender honey ice cream into bowls or cones. For an elegant touch, sprinkle some extra lavender buds on top if desired. Delight in this floral and sweet treat!
