Ingredients

1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 medium onion, finely chopped

2 cloves garlic, minced

1 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced ripe tomatoes

1/2 cup shredded sharp cheddar cheese

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions

Cook the Beef: In a large skillet, heat over medium heat and add the ground beef. Use a wooden spoon to break up the meat as it cooks. Stir frequently until the beef is browned and no longer pink, approximately 5-7 minutes. Carefully drain any excess fat from the skillet.

Sauté Aromatics: Add the finely chopped onion and minced garlic to the skillet with the ground beef. Sauté for 3-4 minutes, or until the onion becomes translucent and fragrant.

Season the Meat: Sprinkle in the chili powder, ground cumin, smoked paprika, and a pinch of salt and freshly ground pepper. Stir the mixture until well combined and cook for an additional 2 minutes to enhance the flavors of the spices.

Add Black Beans: Gently fold the rinsed and drained black beans into the skillet, combining them with the beef mixture. Allow the concoction to heat through for about 2-3 minutes. Once warmed, remove the skillet from heat.

Warm the Tortillas: In a separate dry skillet, warm each tortilla over medium heat for about 30 seconds per side, or until they are soft and pliable. Alternatively, wrap the tortillas in a damp cloth and microwave them for about 30 seconds.

Assemble the Tacos: Take a warm tortilla and place a generous spoonful of the beef and black bean filling in the center. Top it off with a handful of shredded lettuce, diced tomatoes, and a sprinkle of shredded cheddar cheese.

Garnish: Finish your tacos by garnishing them with fresh chopped cilantro. Serve with lime wedges on the side, ideal for squeezing over the tacos for an extra burst of zest.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

Presentation Tips: Arrange the assembled tacos on a large platter, garnishing with additional cilantro. Serve lime wedges in a small bowl in the center for a colorful and inviting display.
