1 cup cherry tomatoes, halved

1 cup fresh figs, quartered

1/4 cup pure maple syrup

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves, plus extra for garnish

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

2 tablespoons olive oil

2 large store-bought flatbreads or naan

1 cup crumbled goat cheese

A handful of arugula for topping (optional)

Red pepper flakes for garnish (optional)

Instructions
 

Prepare the Tomato-Fig Jam:

    In a medium skillet set over medium heat, combine the halved cherry tomatoes, quartered figs, pure maple syrup, balsamic vinegar, fresh thyme, sea salt, and black pepper. Stir the ingredients together to ensure they are well mixed. Cook for approximately 10-12 minutes, stirring occasionally, until the cherry tomatoes burst open and the figs soften, resulting in a chunky jam-like consistency. Once done, take off the heat and allow the mixture to cool slightly.

      Prep the Flatbreads:

        In a separate skillet, add the olive oil and heat over medium heat. Carefully place each flatbread or naan into the skillet, one at a time, and warm them for about 2-3 minutes on each side until they become warm and slightly crispy.

          Assemble the Flatbreads:

            Generously spread the prepared tomato-fig jam over each heated flatbread, ensuring even coverage. Next, sprinkle the crumbled goat cheese evenly on top of the jam.

              Final Heating (Optional):
