Ingredients

1 pound ground beef or turkey

1 medium onion, finely diced

3 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) crushed tomatoes

1 can (8 oz) tomato sauce

1 cup fig jam (preferably homemade or all-natural)

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup corn (frozen or canned)

Optional Toppings: sour cream, shredded cheese, fresh cilantro, avocado, or sliced jalapeños

Instructions

Brown the Meat: In a large skillet over medium-high heat, add the ground beef or turkey. Cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 5-7 minutes. Drain any excess fat from the skillet and transfer the cooked meat to your slow cooker.

Sauté Aromatics: In the same skillet, add the diced onion and minced garlic. Sauté, stirring frequently, until the onions turn translucent, about 3-4 minutes. Once cooked, add the onion and garlic mixture to the slow cooker with the meat.

Combine Ingredients: To the slow cooker, add the drained kidney beans, black beans, crushed tomatoes, tomato sauce, and fig jam. Stir everything together until well combined.

Add Spices: Sprinkle in the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper. Stir well to ensure the spices are evenly distributed throughout the mixture.

Incorporate Corn: Gently stir in the corn, adding a touch of sweetness and a delightful texture to the chili.

Slow Cook: Cover the slow cooker with its lid and cook on low for 6-8 hours or on high for 3-4 hours. Allowing it to cook longer on low will enhance the melding of flavors.

Taste and Adjust: About 30 minutes before serving, taste the chili and adjust the seasoning if needed. Add extra salt, pepper, or additional spices per your flavor preference.

Serve: Ladle the hot chili into bowls and offer your choice of toppings: a dollop of sour cream, a sprinkle of shredded cheese, fresh cilantro leaves, diced avocado, or slices of jalapeños for an extra kick.

Prep Time, Total Time, Servings: 15 minutes | 6-8 hours (cooking time) | 4-6 servings

Presentation Tips: Consider serving the chili in rustic bowls and adding a sprinkle of fresh cilantro and a wedge of lime for a vibrant touch. Enjoy with warm crusty bread or tortilla chips for a delightful meal experience!
