Ingredients

4 pounds Yukon Gold potatoes, peeled and cut into 1-2 inch cubes

1 cup chicken broth (or substitute with vegetable broth for a vegetarian option)

1 cup heavy cream (or use whole milk for a lighter alternative)

1 stick (½ cup) unsalted butter, cut into small pieces

4 cloves garlic, finely minced

1 teaspoon onion powder

Salt and black pepper, to taste

Fresh chives or parsley, finely chopped (for garnish)

Instructions

Prep the Potatoes: Start by peeling the Yukon Gold potatoes and cutting them into uniform cubes, about 1-2 inches in size. This helps them cook evenly and ensures a smooth mash.

Combine Ingredients: Place the cubed potatoes into the slow cooker. Add the minced garlic, choice of chicken or vegetable broth, pieces of butter, onion powder, and generously season with salt and black pepper. Stir gently to mix all the ingredients together.

Cook: Secure the lid on the slow cooker. Set it to cook on low for 6-8 hours, or on high for 4-5 hours, until the potatoes are tender enough to be easily pierced with a fork.

Mash: When the cooking time is complete, carefully remove the lid. Use a potato masher or a hand mixer to mash the potatoes until they reach your preferred consistency—smooth or slightly chunky. Gradually incorporate the heavy cream while mashing, until you achieve that perfect level of creaminess. Taste and adjust with additional salt and pepper as needed.

Serve: Spoon the creamy mashed potatoes into a serving dish. For a delightful touch, sprinkle freshly chopped chives or parsley on top to add a pop of color and enhance the flavor.

Enjoy: Serve warm as a decadent side dish, perfectly paired with your favorite main courses!
