2 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

1 cup Greek yogurt or a dairy-free yogurt alternative

2 tablespoons ranch seasoning mix (store-bought or homemade)

4 large lettuce leaves (Romaine or butter lettuce are ideal)

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

Fresh cilantro or parsley, chopped, for garnish

Lime wedges, for serving

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot enough for roasting.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, sea salt, and black pepper. Toss thoroughly until all florets are evenly coated with the seasonings.

      Roast the Cauliflower: Spread the seasoned cauliflower florets across a baking sheet in a single layer. Roast in the preheated oven for approximately 25-30 minutes. Be sure to toss the florets halfway through cooking to ensure even browning and tenderness. They should be golden brown and fork-tender when finished.

        Make the Ranch Dressing: While the cauliflower roasts, prepare the ranch dressing. In a small bowl, mix together the Greek yogurt and ranch seasoning until smooth and well combined. Taste and adjust the seasonings as desired. If you prefer a thinner dressing, add a splash of water and stir until desired consistency is reached.
