Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
On a lightly floured surface, roll out the pizza dough into a rectangle about 0.5 inches thick. Cut the dough into strips, approximately 1 inch wide and 4-5 inches long.
Place a cube of mozzarella cheese at one end of each strip. Roll the dough over the cheese to enclose it, then knot the strip by twisting it and tucking the ends underneath. Place the knots on the prepared baking sheet.
In a small bowl, combine the melted butter, minced garlic, dried oregano, dried basil, red pepper flakes, and a pinch of salt and pepper. Stir well to combine.
Brush the garlic butter mixture all over the knots, ensuring they are generously coated. Reserve a bit of the garlic butter for later.
Bake in the preheated oven for 15-18 minutes, or until golden brown.
Once baked, remove the knots from the oven and immediately brush them again with the reserved garlic butter. Sprinkle with grated Parmesan cheese and chopped parsley for added flavor and a pop of color.
Allow the knots to cool slightly, then serve warm with marinara sauce for dipping if desired.
