Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup packed brown sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs, at room temperature

1 teaspoon pure vanilla extract

1 cup buttermilk (or substitute with regular milk plus 1 tablespoon vinegar)

2 cups apples, peeled, cored, and diced (approximately 2 medium apples)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup granulated sugar mixed with 1 teaspoon ground cinnamon (for topping)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly coat them with cooking spray for easy removal.

Mix Dry Ingredients: In a large mixing bowl, thoroughly whisk together the all-purpose flour, granulated sugar, packed brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Ensure all ingredients are well combined to avoid any clumps.

Prepare Wet Ingredients: In a separate bowl, whisk together the melted butter (make sure it’s slightly cooled), eggs, vanilla extract, and buttermilk until you achieve a smooth, homogenous mixture.

Combine Mixtures: Gently pour the wet mixture into the bowl of dry ingredients. Using a spatula, stir the two mixtures together until just combined. Be careful not to overmix; it’s perfectly fine if the batter has a few small lumps.

Add Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using), ensuring they are evenly distributed throughout the batter without overworking it.

Fill Muffin Tin: Using a spoon or a measuring cup, divide the batter evenly among the muffin cups. Fill each cup about three-quarters full to allow space for rising.

Add Topping: In a small bowl, mix the granulated sugar with the ground cinnamon. Generously sprinkle this mixture on top of each muffin for a sweet, spiced crust.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes. The muffins are done when a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.

Cool and Serve: Remove the muffins from the oven and let them rest in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely. These muffins are delightful enjoyed warm or at room temperature!

Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 12 muffins

Presentation Tip: Consider serving these muffins on a rustic wooden platter, garnished with a sprinkle of cinnamon and a few apple slices for an inviting autumnal look!
