2 tablespoons olive oil

    Prepare the Sweet Potatoes: In a large mixing bowl, combine the cubed sweet potatoes with 1 tablespoon of olive oil, smoked paprika, chili powder, dried oregano, and a generous pinch of salt and black pepper.
