Preheat your air fryer to 375°F (190°C) for about 5 minutes.
In a large mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, oregano, red pepper flakes, salt, and pepper. Mix until well incorporated.
On a lightly floured surface, roll out the pizza dough into a thin rectangle, about 0.125 inches thickness.
Cut the dough into squares, each about 3-4 inches on each side.
Place a spoonful of the spinach and cheese filling in the center of each dough square.
Fold each square over to create a triangle or rectangle shape, pressing edges firmly to seal.
Brush each stuffed roll with the beaten egg and lightly spray the tops with olive oil.
Place the stuffed pizza rolls in a single layer in the air fryer basket. Air fry for about 10-12 minutes or until golden brown and crispy.
Remove the rolls from the air fryer and allow them to cool for a few minutes. Serve warm with marinara sauce or your favorite dipping sauce.
