12-15 jumbo pasta shells

2 cups fresh spinach, finely chopped (or 1 cup frozen spinach, thoroughly thawed and drained)

1 cup crumbled feta cheese

1/2 cup ricotta cheese

1/4 cup freshly grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 jar (24 oz) marinara sauce

1/2 cup shredded mozzarella cheese (optional, for topping)

Fresh basil leaves, for garnish (optional)

Cook the Pasta: Fill a large pot with salted water and bring it to a rolling boil. Once boiling, carefully add the jumbo pasta shells and cook them according to the package instructions, typically around 9-11 minutes, until they are al dente. Drain the shells and rinse them gently under cold water to halt the cooking process. Set them aside on a clean kitchen towel to cool.

    Prepare the Filling: In a spacious mixing bowl, combine the finely chopped fresh spinach, crumbled feta cheese, ricotta cheese, grated Parmesan cheese, egg, minced garlic, dried oregano, salt, and black pepper. Use a fork to mix everything together until the ingredients are well blended and creamy. Set the filling mixture aside.

      Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

        Assemble the Shells: In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom to prevent sticking.
