4 boneless, skinless chicken breasts

1 cup fresh spinach, finely chopped

1 cup canned artichoke hearts, thoroughly drained and diced

1 cup cream cheese, softened to room temperature

½ cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon fresh lemon juice

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon freshly cracked black pepper

2 tablespoons olive oil

Fresh parsley, finely chopped (for garnishing)

      Prepare the Chicken Breasts: Take each chicken breast and carefully create a pocket by slicing into the thickest part, making sure not to cut all the way through to the other side. Be gentle to avoid breaking the chicken.
