Spinach is undoubtedly a superfood, and it’s no surprise that it forms the base of our salad. This leafy green is loaded with essential nutrients, including vitamins A, C, and K, as well as folate and iron. Vitamin A is crucial for maintaining good vision and a healthy immune system, while vitamin C acts as a powerful antioxidant that helps combat oxidative stress. Furthermore, spinach is a great source of vitamin K, which plays a significant role in bone health. The presence of folate supports cellular health and is especially important for pregnant women. Notably, spinach also contains lutein and zeaxanthin, antioxidants that are vital for eye health.

Ingredients

6 cups fresh baby spinach, thoroughly washed and dried

2 ripe peaches, sliced into wedges (yellow or white varieties work best)

4 oz goat cheese, crumbled into bite-sized pieces

1/2 cup pecans, toasted and roughly chopped for crunch

1/4 medium red onion, thinly sliced

1/4 cup dried cranberries or cherries for a sweet contrast

1/2 cup balsamic vinaigrette (your choice of store-bought or homemade)

Salt and pepper to taste

Instructions

Prep the Spinach: Start by placing the washed and thoroughly dried baby spinach in a large, spacious salad bowl. Make sure there's enough room to toss the salad later.

Prepare the Peaches: Carefully slice the peaches into wedges, ensuring not to bruise them. Evenly scatter the peach slices over the bed of spinach, allowing their juicy goodness to rest on top.

Add Cheese and Nuts: Generously sprinkle the crumbled goat cheese across the salad. Follow this by adding the toasted pecans, which will add a delightful crunch.

Incorporate Onions and Fruit: Distribute the thinly sliced red onion and dried cranberries (or cherries) throughout the salad, ensuring every bite has a mix of flavors and textures.

Dress the Salad: Drizzle the balsamic vinaigrette over the salad. Start with a modest amount, as you can always add more to suit your taste.

Season: Gently toss the salad using your hands or salad tongs, aiming to evenly coat the ingredients without crushing the delicate goat cheese. Taste and season with salt and pepper as desired.

Serve: Enjoy the salad immediately as a refreshing appetizer, a vibrant side dish, or a light lunch that’s sure to impress.
