Ingredients

1 lb skinless, boneless salmon fillet, cut into 1-inch cubes

3 tablespoons Sriracha sauce (adjust according to your spice tolerance)

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon fresh lime juice

2 garlic cloves, finely minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 bell pepper, any color, cut into 1-inch pieces

1 red onion, cut into 1-inch chunks

Skewers (if using wooden skewers, soak in water for 30 minutes)

Fresh cilantro and lime wedges for garnishing

Instructions

Prepare the Marinade: In a medium bowl, whisk together the Sriracha sauce, honey, soy sauce, lime juice, minced garlic, grated ginger, and sesame oil until the mixture is well incorporated and smooth.

Marinate the Salmon: Take a large resealable plastic bag or a shallow dish and add the salmon cubes. Pour half of the marinade over the salmon, ensuring each piece is evenly coated. Reserve the other half of the marinade for basting later. Seal the bag or cover the dish tightly and place it in the refrigerator to marinate for 30 minutes, allowing the flavors to infuse.

Prepare the Vegetables: While the salmon is marinating, chop the bell pepper and red onion into 1-inch pieces, readying them for skewering.

Assemble the Skewers: Preheat your grill or grill pan to medium heat. Once ready, thread the marinated salmon cubes onto the soaked skewers, alternating with pieces of bell pepper and onion. This not only adds vibrant color but also enhances the flavor profile.

Grill the Skewers: When the grill is hot, place the assembled skewers on it. Cook for about 3-4 minutes on each side, basting them with the reserved marinade while grilling, until the salmon is opaque and has developed beautiful grill marks.

Serve: After grilling, carefully remove the skewers from the grill and arrange them artistically on a serving platter. Garnish with fresh cilantro sprigs and serve alongside lime wedges for an extra zing.
