Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar

8 oz cream cheese, softened to room temperature

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

1/2 cup heavy whipping cream

1 cup fresh strawberries, hulled and finely diced

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and granulated sugar. Stir well until the mixture resembles wet sand and all crumbs are evenly coated.

Form the Crust: Line a mini muffin tin with mini cupcake liners. Using the back of a measuring tablespoon, press about 1 tablespoon of the graham cracker mixture firmly into the bottom of each liner to create an even crust. Place the muffin tin in the freezer for approximately 15 minutes to allow the crust to set.

Make the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it is smooth and creamy. Gradually add the powdered sugar while mixing continuously until fully incorporated. Add the vanilla extract and mix until just combined.

Whip the Cream: In a separate bowl, use a whisk or electric mixer to whip the heavy cream until stiff peaks form. This usually takes about 3-5 minutes. Gently fold the whipped cream into the cream cheese mixture with a spatula, being careful not to deflate the whipped cream. Continue to fold until no white streaks remain and the mixture is smooth.

Fill the Bites: Remove the muffin tin from the freezer. Using a spoon or piping bag, carefully fill each lined compartment with the cheesecake filling, filling them about three-quarters full to allow space for toppings.

Add Strawberries: Take a teaspoon of diced fresh strawberries and place them on top of each cheesecake bite, pressing them gently into the filling to secure them in place.

Chill: Return the muffin tin to the refrigerator and chill the cheesecake bites for at least 2 hours, or until they are fully set and firm to the touch.

Serve: Once the bites are set, carefully peel the cheesecake bites from the cupcake liners. For an added touch, garnish each bite with a fresh mint leaf if desired. Serve and enjoy these delightful Strawberry Cheesecake Bites!
