Stuffed Charcuterie Bell Peppers

4 large bell peppers (any vibrant color)

1 cup cooked quinoa or rice, cooled

1/2 cup salami, diced into small pieces

1/2 cup prosciutto, roughly chopped

1/2 cup mozzarella cheese, freshly shredded

1/4 cup green olives, pitted and sliced

1/4 cup sun-dried tomatoes, finely chopped

1/4 cup roasted red peppers, diced

2 tablespoons fresh basil, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon olive oil

Salt and freshly cracked black pepper, to taste

1 teaspoon Italian seasoning

Optional: Balsamic glaze for a drizzle

Prepare the Peppers: Preheat your oven to 375°F (190°C). Carefully cut the tops off the bell peppers and remove all seeds and membranes. Lightly brush the exterior of each pepper with olive oil to add flavor and prevent sticking. Place them upright in a baking dish.

    Make the Filling: In a large mixing bowl, combine the cooled quinoa or rice, diced salami, chopped prosciutto, shredded mozzarella, sliced olives, chopped sun-dried tomatoes, diced roasted red peppers, chopped basil, and chopped parsley. Mix thoroughly until all ingredients are uniformly blended.

      Season the Mixture: Sprinkle in the salt, freshly cracked black pepper, and Italian seasoning. Stir the mixture again and taste to adjust the seasoning as needed.

        Stuff the Peppers: Using a spoon, generously fill each bell pepper with the charcuterie mixture. Press down gently to ensure the filling is compacted and the peppers are well-stuffed.
