Ingredients

2 large cucumbers

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 green onion, finely chopped

1 tablespoon fresh lemon juice

1 tablespoon capers, rinsed and chopped (optional)

Salt and pepper to taste

Fresh dill or parsley for garnish

Instructions

Prepare the Cucumbers: Begin by cutting the cucumbers into 3-inch-long sections. Carefully slice each cucumber section in half lengthwise to create a boat-like shape. Using a small spoon or a melon baller, gently scoop out the seeds from the center, creating ample space for the filling. Set the hollowed cucumber halves aside.

Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna with mayonnaise, Dijon mustard, finely chopped green onion, fresh lemon juice, and chopped capers (if you're using them). Stir the mixture thoroughly until all ingredients are well blended. Taste the filling and adjust the seasoning with salt and pepper as desired.

Stuff the Cucumbers: With the help of a spoon or a piping bag, generously fill each cucumber half with the prepared tuna mixture. Ensure that the filling is compact and mounds slightly above the edges of the cucumber for an appealing look.

Garnish: To enhance the visual appeal and flavor of your stuffed cucumber bites, sprinkle each one with fresh dill or parsley just before serving.

Chill and Serve: Arrange the stuffed cucumber bites on a serving platter and refrigerate for a minimum of 20 minutes. This chilling period allows the flavors to meld beautifully. Serve these refreshing bites cold as a delightful appetizer or snack.
