12 large cremini or button mushrooms

1 cup fresh spinach, finely chopped

1/2 cup cream cheese, softened to room temperature

1/2 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1 clove garlic, finely minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it is hot and ready for baking.

    Prepare the Mushrooms: Carefully clean the mushrooms using a damp cloth to remove any dirt. Gently remove the stems from the mushrooms and set them aside. Finely chop the stems and keep them for the filling.

      Sauté the Filling: In a medium-sized skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and finely chopped mushroom stems. Sauté for about 3 to 5 minutes until the mixture softens and becomes fragrant. Next, add the chopped spinach, cooking it until it wilts, which should take around 2 minutes. Afterward, remove the skillet from the heat and allow the mixture to cool slightly.

        Create the Cream Mixture: In a large mixing bowl, combine the sautéed mushroom-spinach mixture with the softened cream cheese, grated Parmesan, mozzarella, Italian seasoning, and a pinch of salt and pepper. Stir thoroughly until all ingredients are well incorporated and the mixture is creamy.
