Ingredients

4 ripe peaches, pitted and sliced into wedges

1 cup whole milk, at room temperature

3 large eggs

1/2 cup granulated sugar

1 teaspoon pure vanilla extract

1/4 teaspoon almond extract (optional, but recommended for depth of flavor)

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

Powdered sugar, for dusting

Fresh mint leaves, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9-inch round or square baking dish with a bit of butter or cooking spray to prevent sticking.

Prepare the Peaches: Slice the peaches into thin wedges. If desired, sprinkle about 1 tablespoon of granulated sugar over the peach slices and allow them to sit for 10 minutes. This step helps to draw out their natural juices, enhancing their flavor.

Make the Batter: In a medium-sized mixing bowl, vigorously whisk together the whole milk, eggs, granulated sugar, pure vanilla extract, and almond extract until the mixture is fully combined and slightly frothy.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, salt, and baking powder. Gradually incorporate this dry mixture into the wet ingredients, stirring gently until the batter is smooth and free of lumps. Note that the batter will have a thin consistency.

Arrange the Peaches: Evenly distribute the sliced peaches in the bottom of the prepared baking dish. Pour the batter over the peaches, ensuring they are submerged and evenly covered.

Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the clafoutis is puffed up, golden brown on top, and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the clafoutis from the oven and let it cool for a few minutes. Before slicing, dust the top with powdered sugar for a lovely presentation. If desired, garnish with fresh mint leaves for a refreshing touch.

Enjoy: Serve the clafoutis warm or at room temperature. This delightful dish can be enjoyed on its own or enhanced with a scoop of creamy vanilla ice cream for a decadent treat!
