8 ounces cream cheese, softened at room temperature

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sweet corn (can use frozen or canned, simply drain if using canned)

6 slices bacon, cooked until crispy and crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1 jalapeño, seeded and finely chopped (optional, for a spicy kick)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1/2 cup heavy cream

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

In a medium saucepan over medium heat, add a drizzle of oil and sauté the finely chopped onion until it turns translucent, approximately 3-4 minutes. Add the minced garlic and chopped jalapeño (if using), cooking for an additional 1-2 minutes until fragrant and softened.

    Lower the heat to medium-low and add the softened cream cheese to the pan. Stir continuously until the cream cheese is fully melted and combined with the onions and garlic, creating a smooth base.

      Gradually fold in the shredded cheddar and Monterey Jack cheeses. Stir constantly until both cheeses are completely melted and the mixture becomes creamy.

        Incorporate the sweet corn and crumbled bacon into the cheesy mixture, followed by ground cumin, chili powder, salt, and freshly black pepper. Mix thoroughly to ensure all ingredients are evenly distributed.
