1 can (14.5 oz) diced tomatoes, with juice for added flavor

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

1 cup vegetable broth (or adjust for desired consistency)

Juice of 1 lime

Fresh cilantro, chopped for garnish

Slices of avocado (optional, for serving)

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion, minced garlic, diced red bell pepper, and diced green bell pepper.
