2 medium sweet potatoes, peeled and cut into ½-inch cubes

1 tablespoon olive oil

1 medium onion, diced

3 garlic cloves, minced

1 bell pepper (red or yellow), diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) diced tomatoes with juices

1 cup corn kernels (fresh, frozen, or canned)

2 tablespoons chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 cups uncooked elbow macaroni (or gluten-free pasta)

2 cups vegetable broth

1 cup shredded cheddar cheese (optional; use dairy-free cheese if preferred)

Fresh cilantro, for garnish

Instructions
 

Preheat your oven to 375°F (190°C) and prepare a 9x13 inch baking dish by greasing it lightly with non-stick spray or olive oil.

    In a large pot, heat the olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes, or until the vegetables are soft and fragrant.

      Incorporate the sweet potato cubes, chili powder, cumin, smoked paprika, along with a generous pinch of salt and pepper. Cook for another 5 minutes, stirring occasionally, to allow the spices to become aromatic.

        Pour in the rinsed black beans, kidney beans, diced tomatoes (with their juices), corn, and the vegetable broth. Stir the mixture thoroughly to ensure all ingredients are well combined.

          Increase the heat to bring the pot to a gentle boil. Once boiling, reduce the heat to a simmer. Add the uncooked elbow macaroni, then cover the pot. Cook for approximately 8-10 minutes, or until the macaroni is tender and has absorbed most of the liquid.
