Sweet Potato Egg and Cheese Burritos

2 large sweet potatoes, peeled and diced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

6 large eggs

1/4 cup milk (dairy or non-dairy)

1 cup shredded cheddar cheese (or your preferred cheese)

1/2 cup black beans, rinsed and drained (optional)

4 large tortillas (whole wheat or flour)

Fresh cilantro, chopped (for garnish)

Salsa (for serving)

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large mixing bowl, toss the diced sweet potatoes with olive oil, a sprinkle of salt and pepper, and the smoked paprika. Ensure the potatoes are evenly coated. Spread them in a single layer on a baking sheet. Roast in the oven for approximately 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.

    Prepare the Eggs: In a medium bowl, whisk the eggs together with the milk, adding a pinch of salt and pepper to taste. Heat a non-stick skillet over medium heat and pour in the egg mixture. Stir gently and continuously until the eggs are just set and still creamy. Remove from heat and immediately stir in the shredded cheese and black beans (if you're using them), mixing until the cheese has melted and the ingredients are well combined.

      Assemble the Burritos: On a clean kitchen surface, lay out a tortilla. In the center, place a generous spoonful of the roasted sweet potatoes followed by a portion of the cheesy scrambled eggs. Fold the sides of the tortilla inwards and roll it up tightly from the bottom to encase the filling securely. Repeat this process with the remaining tortillas.
