2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

½ teaspoon salt

½ teaspoon black pepper

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese (or your favorite dairy-free cheese)

½ cup jalapeños, sliced (you can use fresh or pickled)

½ ripe avocado, diced

½ cup cherry tomatoes, halved

¼ cup green onions, thinly sliced

¼ cup fresh cilantro, chopped

Sour cream or Greek yogurt (for garnish and serving)

Lime wedges (for squeezing over)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to prepare for roasting the sweet potatoes.

    Prepare the Sweet Potatoes: Rinse and scrub the sweet potatoes thoroughly under cold water. Slice them into thin rounds or wedges, aiming for a thickness of about 1/4 inch for even cooking.

      Seasoning: In a large mixing bowl, combine the sweet potato rounds with olive oil, smoked paprika, garlic powder, ground cumin, salt, and black pepper. Toss well until each piece is evenly coated with the seasoning.

        Roast the Sweet Potatoes: Line a baking sheet with parchment paper and spread the seasoned sweet potato rounds in a single layer. Roast in the preheated oven for 25-30 minutes, flipping the pieces halfway through, until the edges are crisp and the centers are tender.

          Layer the Nachos: Once the sweet potatoes are roasted, remove the baking sheet from the oven and decrease the oven temperature to 375°F (190°C). On a large oven-safe platter, arrange half of the roasted sweet potato rounds to form the base layer.

            Add Toppings: On top of the sweet potatoes, sprinkle half of the black beans, followed by the corn, and then half of the shredded cheese. Repeat this layering process with the remaining sweet potato rounds, black beans, corn, and finish with the last half of the cheese.
