1 pound ground beef or lamb (or 1 cup cooked lentils for a vegetarian option)

1 cup carrots, finely diced

1 cup peas (fresh or frozen)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup vegetable broth or beef broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce (omit for vegetarian option)

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 tablespoons unsalted butter

1/2 cup milk (or plant-based milk)

Olive oil for cooking

Prepare the Sweet Potatoes: Fill a large pot with water and add a generous pinch of salt; bring to a boil. Carefully add the sweet potato cubes and cook until they are tender when pierced with a fork, approximately 15-20 minutes. Once tender, drain the water and set the sweet potatoes aside.

    Make the Filling: In a large skillet, pour in a drizzle of olive oil and heat over medium heat. Add the finely chopped onions and minced garlic, sautéing until the mixture is fragrant and the onions become translucent, approximately 3-4 minutes.

      Cook the Protein: Increase the heat slightly and add the ground beef or lamb (or the cooked lentils if you’re preparing the vegetarian option) to the skillet. Cook until the meat is browned, breaking it into pieces with a spoon. Season the mixture with salt, pepper, dried thyme, and dried rosemary.

        Add the Vegetables: Stir in the diced carrots and peas, allow them to cook with the meat mixture for an additional 5 minutes until the carrots begin to soften.

          Combine Ingredients: Mix in the tomato paste, Worcestershire sauce, and broth. Allow the mixture to simmer gently for about 5-7 minutes to blend the flavors. Taste and adjust the seasoning as necessary.
