Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the olive oil, maple syrup or honey, sea salt, black pepper, smoked paprika, garlic powder, rosemary, thyme, and cayenne pepper (if using). Whisk until well combined.
Add mixed nuts to the bowl and stir to coat each nut with the mixture.
Pour the coated nuts onto the prepared baking sheet, spreading them in a single layer.
Roast the nuts in the preheated oven for 10-15 minutes, stirring halfway through.
Remove from the oven and let the nuts cool on the baking sheet. Optionally, sprinkle fresh herbs on top before serving.
Store in an airtight container at room temperature for up to two weeks.
