1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup corn kernels (fresh, frozen, or canned)

1 medium avocado, diced

1 cup cherry tomatoes, halved

1/2 cup cilantro, chopped

Lime wedges, for serving

Optional toppings: shredded cheese, sour cream, hot sauce, pickled jalapeños

Cook the Rice: In a medium saucepan, bring the vegetable broth (or water) to a rolling boil. Once boiling, add the brown rice, stir briefly, cover with a lid, and reduce the heat to low.
