1 can (15 oz) diced tomatoes with green chilies

1 cup cooked quinoa or rice

1 cup corn (frozen or fresh)

1 packet taco seasoning (or use your favorite homemade blend)

1 small onion, diced

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup salsa

1/2 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

1 tablespoon olive oil

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it's hot and ready for baking by the time your casserole mixture is prepared.
