Tender Herb Butter Steak Skewers

1 lb (450g) flank steak, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon black pepper

1 teaspoon sea salt

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

4 tablespoons unsalted butter, softened

Skewers (if using wooden ones, soak in water for at least 30 minutes)

Marinate the Steak: In a spacious mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, smoked paprika, black pepper, and sea salt until well blended. Add the cubed flank steak to the marinade and toss gently to ensure each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, or up to 2 hours for deeper flavor absorption.

    Prepare the Herb Butter: In a small bowl, combine the softened butter with the chopped parsley, rosemary, and thyme. Mix thoroughly to ensure even distribution of herbs. For added flavor, season with a pinch of salt and pepper. Transfer the herb mixture onto a sheet of plastic wrap, form it into a log shape, and twist the ends to seal. Refrigerate the butter log for about 20 minutes, or until it firms up.

      Assemble the Skewers: Preheat your grill or grill pan to medium-high heat. Carefully thread the marinated steak cubes onto the skewers, making sure to leave enough space between each piece for optimal cooking.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for approximately 8-10 minutes, turning them every couple of minutes for even grilling. Use a meat thermometer to check for your preferred doneness: aim for 130°F for medium-rare or 140°F for medium.
