1 block of firm tofu (14 oz), drained and pressed

1/2 cup breadcrumbs (gluten-free if needed)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

2 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

1/3 cup all-purpose flour (or chickpea flour for a gluten-free option)

1/2 cup almond milk (or your preferred plant-based milk)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper to prevent sticking.

    Prepare the Tofu: Slice the pressed tofu into 3/4-inch thick steaks. Pat each slice dry with a paper towel to eliminate excess moisture, ensuring a crispier texture.

      Create the Herb Mixture: In a mixing bowl, combine the breadcrumbs, Parmesan cheese (or nutritional yeast), chopped rosemary, thyme, parsley, minced garlic, salt, black pepper, and cayenne pepper. Stir the mixture well until all ingredients are evenly distributed.

        Set Up Your Breading Station: Place the all-purpose flour on one plate and pour the almond milk into a shallow bowl, setting them aside for the coating process.
