2 cups broccoli florets

1 red bell pepper, thinly sliced

1 cup snap peas

1 cup baby carrots, halved lengthwise

4 tablespoons olive oil, divided

½ cup teriyaki sauce (store-bought or homemade)

2 tablespoons sesame seeds, for garnish

3 green onions, thinly sliced (for garnish)

Cooked jasmine rice (optional, for serving)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will prepare the oven for roasting your salmon and vegetables to perfection.

    Prepare the Vegetables: In a large mixing bowl, combine the broccoli florets, sliced red bell pepper, snap peas, and halved baby carrots. Drizzle with 2 tablespoons of olive oil and season generously with salt and pepper. Add half of the teriyaki sauce and toss everything together until well coated. Transfer the vegetable mixture to a large sheet pan, spreading them out into a single layer for even cooking.

      Season the Salmon: In a separate bowl, drizzle the salmon fillets with the remaining 2 tablespoons of olive oil. Season the fillets on both sides with salt and pepper. Arrange the salmon fillets skin-side down on the same sheet pan, nestled among the vegetables.

        Add Teriyaki Sauce: Generously brush or drizzle the top of each salmon fillet with the remaining teriyaki sauce, ensuring they are well coated for a rich flavor.
