14 oz firm tofu, pressed and drained

2 tablespoons olive oil

2 teaspoons ground cumin

2 cups shredded cabbage (green or purple)

1 cup fresh cherries, pitted and halved

1/4 cup cilantro, chopped

2 tablespoons lime juice

1 tablespoon honey or agave syrup (for a vegan alternative)

Salt and pepper to taste

For the Tacos:

8 small corn or flour tortillas

1 avocado, sliced

Lime wedges (for serving)

Prepare the Tofu: Begin by cutting the pressed tofu into small, bite-sized cubes. In a mixing bowl, combine the olive oil, ground cumin, smoked paprika, garlic powder, soy sauce, and a pinch of salt and pepper. Add the tofu cubes into the bowl and gently toss to ensure each piece is evenly coated with the marinade. Allow it to marinate for at least 15 minutes to absorb the flavors.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu cubes. Sauté for approximately 8-10 minutes, stirring occasionally, until the tofu is golden brown and crispy on all sides. Once cooked, remove from heat and set it aside to keep warm.

      Make the Cherry Slaw: In a large mixing bowl, combine the shredded cabbage, halved cherries, and chopped cilantro.
