Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

For the Alfredo Sauce:

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon nutmeg (optional)

For the Pasta and Vegetables:

8 oz fettuccine pasta

1 cup cherry tomatoes, halved

2 cups fresh spinach

Fresh basil leaves, for garnish

Additional grated Parmesan cheese, for serving

Instructions

Cook the Pasta:

    - Fill a large pot with water, season generously with salt, and bring it to a rolling boil. Add the fettuccine and cook according to the package instructions until it reaches al dente consistency. As you drain the pasta in a colander, make sure to reserve about ½ cup of the starchy pasta water. Set the drained pasta aside.

      Prepare the Chicken:

        - While the pasta is cooking, season both sides of the chicken breasts liberally with Italian seasoning, salt, and pepper. In a large skillet, heat the olive oil over medium heat until shimmering. Carefully add the seasoned chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is thoroughly cooked and has a beautiful golden-brown crust. Once cooked, remove the chicken from the skillet and allow it to rest for a few minutes before slicing it into strips.

          Make the Alfredo Sauce:

            - Using the same skillet (with any leftover juices from the chicken), melt the butter over medium heat. Once melted, add the minced garlic and sauté for about 30 seconds, or until it smells fragrant and is lightly golden. Slowly pour in the heavy cream, stirring continuously, and bring the mixture to a gentle simmer. Gradually whisk in the grated Parmesan cheese, salt, black pepper, and nutmeg (if using). Keep whisking for about 3-4 minutes until the sauce becomes smooth and thickens.

              Combine All Ingredients:

                - Add the drained fettuccine to the Alfredo sauce and gently toss until every strand is beautifully coated. If the sauce appears too thick, gradually add the reserved pasta water, one tablespoon at a time, until you achieve your desired creamy consistency. Next, fold in the halved cherry tomatoes and fresh spinach; cook for an additional 1-2 minutes, or just until the spinach wilts.

                  Serve:

                    - Transfer the creamy fettuccine to a large serving dish or individual plates. Top generously with sliced chicken and finish with a sprinkle of fresh basil leaves and additional Parmesan cheese. Enjoy this delectable dish while it's warm!
