1 cup whole wheat flour

1/2 cup packed brown sugar

1/2 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsweetened applesauce

1/4 cup vegetable oil or melted coconut oil

1/2 cup milk (dairy or plant-based)

1 large egg

1 teaspoon vanilla extract

1 large apple, peeled and diced (about 1 cup – a tart variety like Granny Smith works perfectly)

Optional: 1/4 cup chopped walnuts or pecans, 1/4 cup raisins or dried cranberries

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each muffin cup with cooking spray.

    Mix Dry Ingredients: In a spacious mixing bowl, thoroughly combine the rolled oats, whole wheat flour, packed brown sugar, baking powder, baking soda, ground cinnamon, and salt. Use a whisk to ensure all ingredients are well mixed and evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the unsweetened applesauce, your choice of oil, milk, egg, and vanilla extract until the mixture is smooth and homogenous.
