1 cup BBQ sauce (your choice of store-bought or homemade)

1 tablespoon extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

4 large whole wheat or spinach tortillas

1 cup shredded sharp cheddar cheese

1 cup fresh baby spinach leaves

1 small red onion, thinly sliced

½ cup fresh cilantro, chopped (optional, for garnish)

Extra BBQ sauce, for drizzling on top

Preheat Your Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.

    Season the Cauliflower: In a spacious mixing bowl, toss the cauliflower florets with the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Make sure each floret is thoroughly coated with the spices and oil for maximum flavor.

      Roast the Cauliflower: Transfer the seasoned cauliflower onto the prepared baking sheet, spreading it out into a single layer. Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and has developed a lovely caramelized color. Make sure to toss the florets halfway through the cooking time for uniform roasting.
