1 cup corn (fresh, frozen, or canned)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 lime, juiced

2 tablespoons olive oil

Salt and pepper, to taste

8 small corn tortillas

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

1 jalapeño, sliced (optional, for a spicy kick)

Crumbled feta or queso fresco (optional, for topping)

Prepare the Bean Mixture: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped red onion. Sauté for about 3-4 minutes until the onion becomes soft and translucent, stirring occasionally to ensure even cooking.

    Add Garlic and Spices: Add the minced garlic, ground cumin, smoked paprika, salt, and pepper to the skillet. Cook for an additional 1-2 minutes, stirring frequently, until the garlic releases its fragrant aroma.

      Incorporate Black Beans and Corn: Carefully add the rinsed black beans and corn to the skillet. Stir well to combine all ingredients. Cook for 5-7 minutes, or until the mixture is heated through and flavors meld together. Remove the skillet from heat and squeeze the fresh lime juice over the mixture, stirring to incorporate.
