1 cup thick Greek yogurt

1 small cucumber, grated and excess moisture gently squeezed out

2 garlic cloves, finely minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Pinch of salt to taste

For the Bowls:

2 cups cooked quinoa or brown rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper, diced (color of your choice)

½ red onion, thinly sliced

¼ cup Kalamata olives, pitted and sliced

Feta cheese, crumbled (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

      - Add the boneless, skinless chicken thighs to the marinade, ensuring they are thoroughly coated.
