1 teaspoon smoked paprika

1/4 teaspoon freshly ground black pepper

Juice of 2 limes (approximately 1/4 cup)

1 cup long-grain white rice (or brown rice)

2 cups chicken broth (or water)

1 can (15 oz) black beans, thoroughly rinsed and drained

1 cup corn (can be fresh, frozen, or canned)

2 cups cherry tomatoes, halved

1 avocado, diced

1/2 cup fresh cilantro, finely chopped

1 cup shredded cheese (cheddar or Monterey Jack)

Sour cream and lime wedges for serving (optional)
