2 large zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (a blend of basil, oregano, and thyme)

Salt and pepper, to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Zucchini:

    - Preheat your oven to 375°F (190°C).

      - Using a vegetable peeler or mandolin, carefully slice the zucchinis lengthwise into thin strips, aiming for about 1/8 inch in thickness.

        - Arrange the zucchini slices on a clean paper towel, then sprinkle evenly with salt. Allow them to sit for 10-15 minutes. This step helps to remove excess moisture. Afterward, gently pat them dry with another paper towel.

          Make the Filling:

            - In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, the grated Parmesan cheese, the egg, garlic powder, dried Italian herbs, and a pinch of salt and pepper. Mix everything together until you have a smooth and creamy filling.
