2 medium zucchinis, coarsely grated

1 cup canned black beans, thoroughly rinsed and drained

1 cup whole wheat breadcrumbs

1/2 cup corn kernels (fresh or frozen)

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (adjust to taste)

1/4 tsp salt

1/4 tsp freshly ground black pepper

1 large egg (or 1 flaxseed egg for a vegan option)

2 tbsp fresh cilantro, chopped (optional)

Olive oil, for cooking

Burger buns and desired toppings (e.g., lettuce, tomato, avocado) for serving

Instructions
 

Prep the Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, twist the towel, and squeeze out as much liquid as possible. This step is crucial to prevent the burger mixture from becoming too soggy.

    Mash the Beans: In a large mixing bowl, add the rinsed and drained black beans. Using a fork or a potato masher, mash the beans until they are mostly smooth, leaving some chunks for added texture and heartiness.

      Combine Ingredients: To the mashed beans, add the squeezed zucchini, corn, chopped red onion, minced garlic, ground cumin, smoked paprika, chili powder, salt, black pepper, and chopped cilantro (if using). Stir the mixture thoroughly until all ingredients are well incorporated.

        Bind the Mixture: Gradually mix in the breadcrumbs and the egg (or flaxseed egg) until the mixture holds together and is moldable. If the mixture feels too wet, add an additional tablespoon of breadcrumbs as needed until the desired consistency is achieved.

          Form Patties: Divide the mixture into equal portions, shaping each portion into burger patties that are approximately 1/2 inch thick. You should yield about 4 to 6 patties, depending on your preferred size.

            Cook the Burgers: Heat a skillet over medium heat and drizzle with a small amount of olive oil to coat the bottom. Once the oil is shimmering, carefully place the patties in the skillet. Cook the burgers for about 4-5 minutes on each side, or until they are golden brown and heated all the way through. Don’t overcrowd the pan; you may need to cook in batches.
