Ingredients

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup whole wheat breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To ensure easy cleanup and prevent sticking, line a baking sheet with parchment paper.

Prepare the Zucchini: Rinse the zucchinis under cold water and pat them dry with a paper towel. Using a sharp knife or a mandoline slicer, cut the zucchinis into thin slices, approximately 1/8 inch thick. Once sliced, transfer them to a mixing bowl.

Create the Egg Wash: In a separate medium-sized bowl, crack the eggs and whisk them vigorously until they are well blended and frothy.

Combine Coatings: In another bowl, combine the grated Parmesan cheese, whole wheat breadcrumbs, garlic powder, onion powder, dried oregano, salt, and black pepper. Stir the mixture until all ingredients are evenly distributed.

Coat the Zucchini: Take each zucchini slice and dip it into the egg wash, ensuring it is fully coated. Allow any excess egg to drip off, then transfer the slice to the bowl containing the Parmesan breadcrumb mix. Press gently on both sides to ensure a good coating sticks. As you coat them, lay the slices flat on the prepared baking sheet in a single even layer.

Add Crispiness: To promote an extra crunchy texture, lightly spray the coated zucchini chips with cooking spray or drizzle a small amount of olive oil over them.

Bake: Place the baking sheet in your preheated oven and bake the zucchini chips for 15-20 minutes. Make sure to flip them halfway through the baking time to ensure they brown evenly. Keep a close watch to prevent burning, as ovens vary in heat intensity.

Cool and Serve: Once they turn a delightful golden brown and are crispy, take the zucchini chips out of the oven. Let them cool on the baking sheet for a few minutes; note that they will continue to crisp up as they cool.

Enjoy: Serve these crispy Parmesan zucchini chips as a tasty snack or appetizer along with your favorite dipping sauces, such as marinara sauce, ranch dressing, or a zesty yogurt dip.
