3 tablespoons soy sauce (substitute with tamari for gluten-free)

1 tablespoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

3 green onions, chopped

Prep the Zucchini: Begin by washing and grating the zucchinis using either a box grater or a food processor. After grating, place the zucchini in a clean kitchen towel. Gather the corners of the towel and twist it to squeeze out as much moisture as you can; this step is crucial to prevent your fried rice from becoming soggy.

    Cook the Aromatics: In a large skillet or wok, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 2-3 minutes until it turns translucent. Next, add the minced garlic, continuing to sauté for an additional 30 seconds or until it becomes fragrant.
