2 medium zucchinis, grated

1 cup cooked jasmine rice (preferably day-old for best texture)

1/2 cup frozen peas, thawed

1/4 cup green onions, finely chopped

1 clove garlic, minced

2 large eggs, beaten

1/2 cup breadcrumbs (plus extra for coating)

1/4 cup grated Parmesan cheese

1 tsp soy sauce

1/2 tsp sesame oil

Salt and pepper, to taste

Vegetable oil, for frying

Prepare the Zucchini: Start by grating the zucchinis into a clean kitchen towel. Gather the corners of the towel and twist to squeeze out as much excess moisture as possible. This step is crucial to prevent your rice balls from becoming soggy.

    Mix Ingredients: In a large mixing bowl, combine the drained grated zucchini, cooked jasmine rice, thawed peas, finely chopped green onions, minced garlic, beaten eggs, breadcrumbs, grated Parmesan cheese, soy sauce, sesame oil, and a pinch of salt and pepper. Use a spatula or your hands to mix everything together thoroughly until well combined.

      Form the Balls: With clean hands, take about 2 tablespoons of the mixture and roll it into a ball between your palms. Repeat this process, placing the formed balls on a parchment-lined tray. You should yield approximately 12-15 rice balls.

        Coat the Rice Balls: To achieve a crispy exterior, roll each rice ball in additional breadcrumbs until evenly coated. This gives them a delightful crunch when fried.
