Ingredients

For the Zucchini Fritters:

2 medium zucchini, grated (approximately 2 cups)

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 large eggs

2 green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon black pepper

Olive oil (for frying)

For the Garlic Aioli:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon fresh lemon juice

Salt and pepper to taste

Instructions

Prepare the Zucchini: Begin by placing the grated zucchini in a large mixing bowl. Evenly sprinkle the salt over the zucchini and let it rest for approximately 10 minutes. This step will help the zucchini release excess moisture. After resting, take a clean kitchen towel or cheesecloth and gently squeeze the zucchini to remove as much liquid as possible. Set aside.

Mix Ingredients: In the same bowl containing the drained zucchini, add the all-purpose flour, grated Parmesan cheese, chopped parsley, eggs, green onions, garlic powder, and black pepper. Use a spatula or large spoon to mix everything thoroughly until all ingredients are evenly combined.

Heat the Oil: In a large skillet, pour in enough olive oil to cover the bottom by about 1/4 inch. Heat the skillet over medium heat until the oil is shimmering, indicating that it’s hot enough for frying.

Fry the Fritters: Using a tablespoon, scoop out portions of the zucchini mixture and gently form them into flat patties. Carefully place the fritters in the hot oil, ensuring not to overcrowd the pan. Fry each fritter for about 3-4 minutes on each side or until they develop a golden brown and crispy exterior. Once done, transfer the fritters to a paper towel-lined plate to absorb any excess oil.

Prepare the Garlic Aioli: While the fritters are frying, take a small mixing bowl and combine the mayonnaise, minced garlic, and lemon juice. Whisk the mixture until smooth, then season with salt and pepper to your liking. Adjust the flavors according to your preference.

Serve: Serve the zucchini fritters warm, drizzled or served alongside the garlic aioli for dipping. For an extra touch, garnish the plate with additional parsley for a pop of color.
