Ingredients

2 medium zucchinis, grated

8 oz elbow macaroni (or gluten-free pasta of your choice)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

2 tablespoons all-purpose flour (or gluten-free flour)

2 cups whole milk (or almond milk for a dairy-free option)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and freshly ground pepper to taste

½ cup breadcrumbs (for topping)

2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

Prep the Zucchini: Begin by grating the zucchinis using a box grater or a food processor. Transfer the grated zucchini to a clean kitchen towel. Gather the edges of the towel and twist to squeeze out excess moisture from the zucchini, then set it aside for later use.

Cook the Pasta: In a large pot, fill it with water and bring it to a boil. Add a generous pinch of salt along with the elbow macaroni. Cook the pasta according to the package instructions until al dente. Once cooked, drain the macaroni and set it aside.

Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, stir in the flour and continue cooking for about 1 minute, allowing it to become bubbly and slightly golden. Gradually whisk in the milk, taking care to avoid any lumps. Keep stirring as the sauce cooks for 3-5 minutes, or until it thickens to a smooth consistency.

Add Seasonings and Cheeses: Lower the heat to medium-low, then add the garlic powder, onion powder, smoked paprika, salt, and pepper to the sauce. Stir well to incorporate the flavors. Gradually add the shredded cheddar, mozzarella, and grated Parmesan, stirring continuously until all the cheese has melted and the sauce is creamy and smooth.

Combine Ingredients: In a large mixing bowl, combine the drained macaroni and the squeezed grated zucchini. Pour the creamy cheese sauce over the pasta mixture. Gently fold everything together until the pasta and zucchini are evenly coated with the sauce.

Prepare for Baking: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish and transfer the cheesy mac and zucchini mixture into the dish, spreading it out evenly.

Add Breadcrumb Topping: In a small bowl, combine the breadcrumbs with a drizzle of olive oil, a pinch of salt, and some freshly ground pepper. Mix well, then sprinkle the breadcrumb mixture evenly over the top of the mac and cheese layer.

Bake to Perfection: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbling.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to cool for a few minutes. Before serving, garnish with finely chopped fresh parsley for a pop of color.
