Zucchini Pizza Grilled Cheese

2 medium zucchinis, sliced into 1/4-inch rounds

4 slices of whole grain or sourdough bread

1 cup shredded mozzarella cheese

1/2 cup marinara sauce

1/4 cup sliced black olives

1/4 cup pepperoni slices or plant-based pepperoni

1 teaspoon Italian seasoning

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Prep the Zucchini: Start by preheating your grill or a non-stick skillet to medium heat. In a bowl, toss the zucchini rounds with 1 tablespoon of olive oil, salt, and pepper until well coated.

    Grill the Zucchini: Add the seasoned zucchini slices to the grill or skillet. Grill for about 3 minutes on each side until they are tender and display beautiful grill marks. Once cooked, remove them from heat and set aside.

      Assemble the Sandwich: Take two slices of bread and spread a thin layer of marinara sauce on one side of each slice. On the sauced side of the first slice, sprinkle half of the mozzarella cheese. Layer the grilled zucchini evenly over the cheese, followed by the pepperoni and black olives.
